As with any software still in the development stage, this release is not intended for serious production environments or mission critical data. That said, I have the new version installed under Mac OS X's X11 environment and it seems to very stable. The final release of version 2.1 is slated to feature some pretty cool new stuff, including a new extensions framework for third party developers. So far there are no actual extensions available, but given the functionality extensions have allowed in Firefox, I think the inclusion of an extensions framework could be the biggest thing to hit OO since it's debut. I'll be doing a full review of Open Office when the official version is released (currently slated for later this month), by which time hopefully some extensions will be available.
