title: Cuban black bean, chicken and rice date: 2015-10-26T19:32:26-0400 --- Chicken marinade 1 teaspoon cumin 3 cloves garlic or a few shakes granulated. juice of 2 limes + 1 lime zested juice of 1 orange 1 teaspoon honey 4 T soy sauce 1 pound boneless chicken, cut into bite size pieces make and let marinate for a spell Then chop: 4 cloves garlic 2 shallots Fry garlic and shallots in large pan with plenty of oil. Add chicken and pour in marinade. Cook until chicken is starting to lose its pink. Add 2-4 cups of black beans and juices. Add 2T balsamic vinegar 2-4T soy and 1c or so of water or stock. Simmer until reduced to a nice sauce. Adjust seasoning. Serve with some cumin rice (cooked in chicken stock instead of water) maduros/mango salsa/cilantro and a side of leafy green veg.
