COMMENTS:
This is essentially the exact diet we raised our two children with from the time they first showed interest in solid food up until age two or three. It is a simple meatless diet, but actually quite high in protein. Corn, beans and squash (or pumpkin) together form complete protein equal to that in meats. Eggs, cottage cheese, and dairy products in general are complete proteins, also. We recommend only whole grain breads, preferably homemade when possible. Whole grains are genuinely high in protein. If your baby has a sensitive digestion, try rice flour for your breads and muffins. (Rice flour pancakes, by the way, are unbelievably yummy!)

You will notice that most breakfasts and suppers call for fruit. This keeps the baby's bowel habits regular and easy. Fruit should be fresh whenever possible, and served with skins peeled off and the fruit cut into small pieces. Canned fruits may be used, but should be juice-packed as opposed to syrup packed.  You can use syrup-packed fruit if you rinse the fruit in a glass container before serving it. Do not rinse the fruit in the can or it will taste like the can.

Raw foods, such as grated vegetables, sprouted beans, and sprouted grains should be encouraged as soon as a child can eat them easily. Mash anything with a fork to make it easier to eat, or use a hand baby-food grinder or blender. Corn and beans are best mashed up for best digestion in the early months before your baby can or will chew thoroughly.

We gave our babies a small bit of vitamin C with every meal, and with every nursing or snack. Powder one-half of a chewable 250 mg. vitamin C tablet between two spoons and slip it into the child's fruit, or an unsweetened juice. I think this is essential to help ensure a baby's good health.

You probably noticed that beverages in general and "milk" in particular are not included in this schedule. Water, natural unsweetened fruit juice, and vegetable juice are all good. If there are cheeses in the diet (and I think this should definitely be the case), you really do not need fluid milk. Consider milk to be optional, not essential.

This diet example is in no way meant to replace your pediatrician, whom you should see if and when necessary. This diet may, however, help relegate your doctor to the role of the "Maytag" repairman. That's fine! Our children have never had an antibiotic in their entire lives, all the way into college. That is why we recommend the vitamin C supplement with every meal, and why we raised them on a meatless menu, like this one.
